The Roscón de Reyes (Rosca de Reyes in Latin America, Rosco de Reyes or Pastel de Rey) is a bun made with a sweet dough which is shaped like a doughnut and decorated with slices of crystallised fruit (frosted) or glazed in assorted colours. It can be filled with whipped cream or custard and now mocha, truffle or chocolate too. Also hidden inside are “surprises”, usually ceramic or plastic figurines, to be found by whoever gets that particular slice. Another very special feature of this cake is that hidden inside is also a dry bean: the tradition is that whoever gets the bean has to foot the bill for the cake. It is served on January the 6th, the date known as Día de Reyes (Day of the Kings).
